Low Fat Veg Barley Soup Recipe



One of the best light dinners that one can have is soup.  Just pair a big bowl soup with a wheat roll, bread or some wheat crackers can make a meal. Here is a recipes  for the vegetarian  barley soup for 4 serves






Ingredients
  • 50 gm Barley Grains
  • 2 Table Spoon Rice brain oil
  • 200 gm chopped mixed vegetables
  • 4 Cloves minced garlic
  • 2 Medium onion, chopped finely
  • 2 Inch piece grated
  • 4 Table Spoon lemon juice
  • 2 Table Spoon orange zest
  • Salt to taste
  • Pepper to taste




Cooking Steps
  • In a pan, boil the barley till soft. Drain and set aside.
  • Heat a pan and add oil.
  • Cook onions till soft.
  • Add ginger, garlic and vegetables.
  • Cook for about 3 to 5 minutes.
  • Add orange zest and 1 cup water .Boil.
  • Add salt and pepper.




Serve hot.
