One of the best light dinners that one can have is soup. Just pair a big bowl soup with a wheat roll, bread or some wheat crackers can make a meal. Here is a recipes for the vegetarian barley soup for 4 serves
Ingredients
- 50 gm Barley Grains
- 2 Table Spoon Rice brain oil
- 200 gm chopped mixed vegetables
- 4 Cloves minced garlic
- 2 Medium onion, chopped finely
- 2 Inch piece grated
- 4 Table Spoon lemon juice
- 2 Table Spoon orange zest
- Salt to taste
- Pepper to taste
Cooking Steps
- In a pan, boil the barley till soft. Drain and set aside.
- Heat a pan and add oil.
- Cook onions till soft.
- Add ginger, garlic and vegetables.
- Cook for about 3 to 5 minutes.
- Add orange zest and 1 cup water .Boil.
- Add salt and pepper.
Serve hot.
